Grocery Cart Challenge

Every Friday I am going to post a new low cost recipe to go a long with this challenge! If you would like to participate or would just like some more great recipes please go to Gayle's blog at http://grocerycartchallenge.blogspot.com/.

Okay I am starting to get excited about this! This week I am posting a Chicken Casserole! This Casserole is yummy and makes a good bit. I can get this in 4 containers but you can split it up in two for larger families. I bake one and freeze the rest. It is great to have ready and in the freezer to pull out for busy days.

Chicken Casserole

4 Chicken Breast
(Or 2 Large Cans of Chicken)
One Can Cream of Celery soup
One Can Cream of Chicken Soup
2 Sticks of butter
8 ounces of Egg Noodles
1 1/2 cups shredded cheese
8 ounces sour cream
1 small onion, finely chopped
1 1/2 pkg Ritz Crackers

Cook Chicken and save broth to boil noodles. (If you use Can chicken just add one can of Chicken broth to your water that you boil your noodles in.) Saute chopped onion with one stick of butter. Chop or Pull Chicken apart then mix chicken, noodles, onions, soups, cheese, and sour cream. Divide casserole into dishes. Crumble Ritz Crackers on top and drizzle one stick of melted butter then bake 30 minutes at 350 degrees.
