Low Country Boil




Paula Deen's Low Country Boil
(I make this a lot and we all really love it.)

Ingredients

  • Crab boil, 2 teaspoons per quart of water
  • 12 red new potatoes
  • 6 (4-inch) smoked sausage link sausage
  • 6 ears corn
  • 3 pounds fresh shrimp, unpeeled

Directions

Fill a large pot with enough water to cover all of the ingredients. Add the crab boil and bring to a boil. Adjust the crab boil to suit your taste. When the water boils, add the potatoes and sausage. Cook on medium heat for 20 minutes. Add corn and cook for an additional 10 minutes. Add shrimp and cook for no more than 3 minutes. Drain and serve with warm bread. 

I serve with coleslaw and cornbread! Yum!!!

Continued Beach Trip

Continued Beach Trip

A week from today we will be checking out of the Navy Inn and leaving Jon's parents to meet my parents in Navarre Beach. We normally go to Pensacola Beach but we were not able to find a good place that we would all fit in for this summer. Mom found a perfect place in Navarre right on the beach and we are all excited. We are hoping for less crowds and just a fun calm week with family. We all split up the meals so each family will be cooking 2 nights and in charge of clean up. Our set up on the beach will be great also. We have two blue pop up tents, ladder golf, Frisbee, a blowup pool for the little ones and lots of sand toys. We should all have fun in the sun.

Baked Shrimp

Baked Shrimp
Melt a stick of butter in the pan. Slice one lemon and layer it on top of the butter. Put down fresh shrimp, then sprinkle one pack of dried Italian seasoning. Put in the oven and bake at 350 for 15 min.

Counting Down

Counting Down

Next Tuesday Jon, Tyler and I are driving to Pensacola Beach! I can not wait!!! We can not wait!!!! We have all been so ready to go to the beach for a while now and so glad it can happen now. Jon is really excited to relax in the sun since he is getting ready to deploy and last years beach trip was not so fun for him since he came down with Malaria.
We are staying at the Pensacola Navy Base Tuesday through Saturday. Tuesday and most of Wednesday we are going to have family time just the three of us and then Jon's parents are joining us on Wednesday night through Saturday for a St. John family vacation.
We are excited about the Navy Inn! It has stairs down to the "beach" which is actually the bay but it is where the bay and ocean are meeting and the water is still really pretty. It also has the white sugar sand beach as well. We will of course drive over to the island to visit the real beach while we are there as well.
 Food!!!!! We love to eat at the beach. So much yummy food. Our favorite is Flounders on the Pensacola Beach and we will be eating there at least once! I love that Tyler can play on the playground and in the sand while we relax at our table. So much fun and the food is fantastic! We also eat at Landry's even though it is a chain the food is so yummy and we do not have one close to us. Many more restaurants that we love to mention.
So we will keep you updated next week to all the fun we are having.

Today we are headed up to Paris Landing so that Jon and my Dad can fish tomorrow in a fishing tournament. We are all hoping to have a great weekend together as a family and it will be so great to see my parents.

Broccoli, Grape, and Pasta Salad



Ingredients
  • 1 cup chopped pecans
  • 1/2 (16-oz.) package farfalle (bow-tie) pasta
  • 1 pound fresh broccoli 
  • 1 cup mayonnaise 
  • 1/3 cup sugar
  • 1/3 cup diced red onion
  • 1/3 cup red wine vinegar
  • 1 teaspoon salt
  • 2 cups seedless red grapes, halved 
  • 8 cooked bacon slices, crumbled

Preparation

  1. Preheat oven to 350°. Bake pecans in a single layer in a shallow pan 5 to 7 minutes or until lightly toasted and fragrant, stirring halfway through.
  2. Prepare pasta according to package directions.
  3. Meanwhile, cut broccoli florets from stems, and separate florets into small pieces using tip of a paring knife. Peel away tough outer layer of stems, and finely chop stems.
  4. Whisk together mayonnaise and next 4 ingredients in a large bowl; add broccoli, hot cooked pasta, and grapes, and stir to coat. Cover and chill 3 hours. Stir bacon and pecans into salad just before serving.

Fishing Weekend Number One

Fishing Tournament Number One

Saturday Jon and one of his friends were fishing in the Hulmes Bass Classic so Friday when Jon got off work we headed to Paris Landing. We checked in to our hotel and then headed to meet Jon's buddy for dinner. We went to this great restaurant called Fresh Market. The food was very good. There are not a lot of choices in places to eat this is a very small town but this was a good one and we will be back very soon to eat there again. After dinner Jon got his fishing stuff ready and then we headed back to the hotel. We all put on our swimsuit and headed to the heated indoor pool. It felt amazing and I could have stayed hours. Tyler and Jon were having a blast as well. We finally got Tyler to get in his little round float and he realized he could have so much fun. That boy was kicking and moving his arms like he was a major swimmer. He even would jump in off the side. He really had fun and we had a blast watching him kick an splash around. It was also nice because he could touch in the shallow end and walk around and Jon and I could sit on the bottom and watch.
Saturday morning Jon got up at 2am to be able to get ready and meet up at the Marina. They were a little early. Of course! They got all the paperwork done and got the boat in the water. They were boat #8 for the tournament. While the guys were doing all this Tyler and I were sleeping away. We woke up at 7:45 am and got up and got ready and picked up some of the things in the room. We went downstairs and had breakfast and checked to see the pool was open. Sadly it was not and check out was at 11am. We packed up the room and watched some cartoons and checked out right before eleven. We headed back to Paris Landing State Park and went to a playground. Everything on it was so hot it was burning little Tyler's legs. He would cry that it was hot but he wanted to play. We decided to leave and we were going to go to the outdoor pool but it did not open till 12 and people were lining up a hour before to make sure and get a chair. We decided that was a bust as well. We drove back to Paris, TN and drove around. We found downtown which was pretty nice. It had tons of fun boutique shops and some fun little restaurants. I love boutique shops! :) We left downtown and went driving a little more. We found Wal-mart and decided to walk in. It was the nicest Wal-mart I have ever been in. Super nice layout and super cleaned and organized. We only grabbed a few small things and then we headed to go eat some lunch. Tyler said he wanted "duck" so I tried to stop several places and they were all no go's to him until I drove up to Captain D's and he was so excited. We had some lunch and then we got in the car to drive to the Marina. Tyler fell asleep in the car and I was happy. We sat in the car with all the windows down and I read on my Kindle while he slept in the car. We waited till daddy was pulling back up to the marina for us to get out of the car. Tyler was so happy to see all the fish. He kept saying Bass over and over. Everyone was enjoying watching him and all his excitement. They guys unloaded the boat and got the fish out to be weighed. They did not have the day they thought they would but they had a lot of fun and did catch fish. That was the main goal.

 After cleaning the boat up some and getting Jon's fishing gear back in our car we started heading home. Jon was driving and started getting to sleepy so we pulled over to switch drivers. Jon was starving so we stopped at old school Dairy Dip. We got burgers and fries and Tyler of course got his favorite "duck". It was pretty good but not amazing. HA! The ice cream did look great but we resisted and headed home. Jon and I were exhausted and he was totally sunburned. Tyler wanted to play on the boat and so did Jon. They did that and I came inside to do some things and I fell asleep. Jon and Tyler came in and we got him a bath and in the bed and we both went to sleep. We were so tired but had a fun weekend together.

Sunday we spent the day relaxing. We had to go to Wal-mart for a few things for the boat and Tyler had a blast. He found him some baseball items. He was adorable. He also found him a toddler couch and even needed daddy to sit on it. When we got home the boys played on the boat and did a lot of cleaning on it. Jon and Tyler also played in the back yard for a little while when it was not sprinkling. Tyler smile wins my heart every single time.

I use to do Recipe Friday a lot but I have not done it since before Thanksgiving. I wanted to start it back up because it is fun for me to do. I am not doing near the cooking I like to do right now because I am pregnant and it is not super fun to cook when pregnant.

English Pea Salad
-This recipe is from my Mom and I did not like it when I was little but I had it in May and I could have eaten the whole entire casserole dish.

Ingredients
Shredded Lettuce
Canned English Peas
Mayonnaise
Shredded Cheddar Cheese
Crumbled Bacon

(This is not a measurement recipe)

First cover the bottom of the casserole dish that you are using.
Second cover the lettuce with the canned English peas.
Third cover English peas with mayonnaise.
Fourth Cover mayonnaise with shredded cheese.
Fifth top it all off with crumbled bacon.

Place in refrigerator. It taste better if you can leave it in refrigerator over night but is not mandatory. 

(Can also be done in a trifle bowl if you wish.)

Walker at 28 Weeks

Walker at 28 Weeks

Today I am 28 weeks and 5 days. Hello Third Trimester! This pregnancy is going so fast.

Sleep is starting to get hard. I normally sleep so hard that I am fine but in the last week and a half I am waking to have to go to the bathroom at least once and I often wake up when trying to roll over. I also stay hot which makes it hard for me to sleep.

Swelling is happening. I am no where near as swollen as I was with Tyler at this point which is nice. I am mostly swelling if I am standing out in the heat of the day or by night fall I have some swelling in my feet. My hands also swell during the night when I am sleeping and get very stiff. I am also having trouble with my hands falling asleep off and on all day and night. So weird but doctor says it is from the heat.

My doctor has had me on two week appointments for most of my pregnancy so that she can keep check on me and that nothing bad is happening. So far we are doing pretty well. I do have Gestational Diabetes again and have had a few struggles balancing out my sugars but yesterday my doctor thought my numbers looked great. She is hoping this slows some of little mans growing down a little. I have one more appointment in two weeks which is right before our two weeks of vacation then after that I will go to having 2 non stress test a week and weekly ob appointments with ultrasounds to check my fluid levels. I will be around 32 weeks then.

Walker is estimated to weigh in around 3.5 pounds right now. A average baby weighs around two and a quarter pounds at 28 weeks. I have a big boy. We had a good laugh that Tyler weighed 4 pounds and 15 ounces at 34 weeks when he was born. I believe Walker will be much bigger. Crazy! Walker is also measuring a week and half early and she will be inducing me at 37 weeks for sure (She says if he is not already here) to keep me from having a c-section. Good thing is his head is measuring at a normal size for his age.

Walker is sitting very low on me and he is also head down now. He is a very active little boy and a great kicker. He loves to show different parts of his sticking out of my belly. We have seen a head, a butt cheek, a foot or two, and his little hand. So funny!

Walker's nursery is still in progress. We have done a little bit here and there. I have a few things ordered and I am waiting on those to complete a few craft projects and I am also waiting on the husband to hang a shelf in the laundry room so that I can finish removing some items from the room. I am ready to fold baby clothes, finish hanging clothes, and putting away receiving blankets and swaddle blankets. So fun!

I have gained 14.5 pounds so far and my doctor is proud. She says it is all baby and chest. I have taken most of my clothing that I wore when pregnant with Tyler to Once Upon a Child because they are too big or have only the lower waist on them. I can not wear anything if they do not have a tummy panel because he is so low and it hurts me.

Yesterday at my doctors appointment they did all my 28 week lab work and I also got my weekly progesterone shot. I also got my RhoGAM shot since I am RH negative. That shot is straight from the devil. It did not hurt when I got it with Tyler but holy cow it was bad yesterday. After drawing my blood and then two shots I felt super weird and had to sit down and I passed out in the chair. We thought maybe my sugar was low but it was in normal range. I think the shot just knocked me out. I was okay after a few minutes and I drank a lot of water.

Jon and I are still so excited that God blessed us with this little miracle boy. We are also praying everyday that everything stays well and that he remains healthy.
