National Cherry Cobbler Day
May 17, 2011 is National Cherry Cobbler Day!
I saw this on twitter this morning and had a little giggle because I made a cherry cobbler last night for dessert. So I thought I would share the recipe! So easy and was low sugar, sort of!
1 box of pie crust, (contains 2)
filling has 2 options
1. 2 cans of no sugar added cherry pie filling
2. 4 cups of fruit (aka cherry's)
1 cup of splenda or truvia
4 tablespoons flour
1 teaspoon salt
Spray cast iron skillet with non stick cooking spray. Press pie crust in skillet. Mix together the splenda, flour, and salt (if making apples add nutmeg and cinnamon to flour mixture), add fruit. Pour on top of crust. (If using 2 cans of no sugar added cherry pie filling just scoop it on top of pie crust.) Add dots of butter to top of fruit and place the other crust on top and seal edges. Brush water on top and sprinkle with splenda or truvia. Make 4 slots in the crust and bake at 400 degrees for 30 minutes.
